The Super Spinach Filo Tart we made recently was inspired by a recipe we learned last summer at Maggie and Rose children's club. It has quickly become a family favorite, especially since my daughters usually aren't huge fans of spinach, but this one had them hooked! The tart is creamy and delicious, perfect for a cozy family dinner.
Here’s what we used:
- 2 onions, halved and sliced
- A knob of butter
- 2 garlic cloves, crushed
- 500g of spinach, washed and roughly chopped
- A pinch of grated nutmeg
- 200g of crumbled feta cheese
- 2 beaten eggs
- 4 large sheets of filo pastry
Preheat your oven to 200°C or gas mark 6. First, you’ll want to sauté the onions in a bit of butter until they’re golden and soft. Add the crushed garlic and cook for another couple of minutes. Then start adding the spinach in batches, cooking until it wilts down. Be sure to do these steps yourself as they involve heat.
Once cooled, transfer the mixture to a bowl, discarding any excess liquid. Stir in the nutmeg, feta cheese, and beaten eggs. Season to taste.
Now it’s time to assemble the tart. Brush a sheet of filo pastry with melted butter and lay it in your baking tin, allowing the edges to hang over. Continue layering the remaining sheets of filo, brushing each one generously with butter. Rotate the tin slightly between each layer to create a beautiful pattern. Once all the pastry is used up, pour in the spinach mixture and fold over the excess pastry to seal.
Brush the top of the tart with more butter and bake in the preheated oven for around 20-30 minutes, or until the pastry is crisp and golden brown. Let it sit for a few minutes before flipping it out onto a plate.
We served ours with crispy potato wedges, which complemented the tart beautifully. It’s such a comforting dish that even our spinach-resistant kids couldn’t resist going back for seconds!
